OUR ORIGINS

In 2014 the dream of bottling Mexico began… Today, Cerveceria Allende is a reality.

DREAMS ARE SHARED IN JOURNEYS

It was on a trip outside our homeland, Mexico, where wcreating a Mexican beer that expressed the history, customs, traditions, colors, and flavors of this great country with quality and authenticity, using traditional techniques. 

We decided to establish in the heart of Mexico, San Miguel de Allende, a city that has lived history in its own flesh, full of art, music, architecture, gastronomy, and tradition, it was not until 2014 that it had a product that represented it.  

Uniting the dream of bottling up Mexico, and giving voice to San Miguel de Allende, Cerveceria Allende was born.

OUR PROCESS

OUR PROCESS

The process behind Cerveza Allende starts in the mill, where the malt grains are finely ground. After that, the malt is sent to the mash tun,, where it receives a hot water bath for a specific amount of time, releasing sugars and nutrients. Once the mash process is completed, sweet wort is boiled, afterwards hops are added, which will give the characteristic bitterness, aroma, and flavor of our Mexican beer.

We cool down the wort at 20 °C for Ales and at 12 °C for Lagers, carefully preparing for fermentation. Fresh wort is then sent to fermentation tanks, where yeast is added.  This is where the yeast feeds on the sugars in the wort, transforming sugar into alcohol and carbonating the beer. The type of fermentation we use will depend on the type of beer we want to produce, also we like to take advantage of the conical shape of our fermentation tanks to mature the beer.

To achieve a crisp, refreshing beer, we strain the mix, separating it from yeast and other solids. Later, we use an isobaric filler for bottling, which prevents oxygen from entering the bottle and  thus prevents the deterioration of our beer. To finish the process, we pass our bottles through a pasteurizing tunnel to remove contaminants that may be present in the bottles.

Since 2014 Mexican hands have been present in the elaboration of our beers, combining work, effort, passion, and love for Mexico, thus forming the Allende family.

All of us who are part of this family are passionate about innovation, beer, and Mexican culture, and we want to share a drink of Mexico through Allende beer.
